Origin
Grapes are sourced from some of the highest quality Burgundy terrior, the Domaine comprising 45 hectares of exclusively Premiers and Grand Cru vineyards. With such an array of vineyards along the south side of the Côte d’Or, the Domaine are able to draw upon a multitude of terroirs that best suit their production. Still, an unusual wine in that it is a selected blend of 7 different Beaune Premier Cru holdings, including Clos du Roi, Clos des Fèves and Clos des Mouches, giving the wine unique character and style.
Producer
Maison Chanson is one of the oldest producers and Domaines in Burgundy, having been founded in 1750. For a time this great estate rather lost its way, but since its purchase by the prestigious Champagne house Bollinger in 1999 it has gone from strength to strength. They are a Beaune specialist with some of the largest and best Domaine holdings of any in this important appellation.
Grape Variety
100% Pinot Noir.
Grapes are selected from 7 vineyards, with batches kept separate during the fermentation and ageing process. Whole bunches are put through cold maceration then alcoholic fermentation. Matured in oak barrels (20% new) for 18 months.
Food Match
Try with simply roasted red meats with their jus, especially lamb, along with duck, chicken and even mild game like Guinea Fowl. Despite what they say NOT a good partner to cheese and watch not make your sauces overly rich, Fine Burgundy can easily be overwhelmed.
