Located in the Elgin Valley, approximately 70km south-east of Cape Town. The area became successful in the apple growing industry in the mid 20th century, therefore was identified as a suitable cool-climate wine growing region.
After a period of skin contact, berries are pressed and juice settled. Fermentation follows at controlled temperatures, ceased at the desired sugar levels.
Drink now and over the next 18 months.
Paul Cluver wines is situated on the De Rust estate, which has been in the family since 1896. As well as top-quality wine production, the estate is also involved with a number of conservation initiatives, covering an area of 1013 hectares. Meanwhile, Paul Cluver himself is founding chairman of the Groenlandberg Conservancy, covering a vast 34000 hectares. The estate also forms part of the UNESCO world heritage site, the Kogelberg Biosphere.
The aromatics and residual sugar of this wine make it an ideal partner with spicy food. It does well with any dish containing coconut milk. It works well with white meat (fish and poultry), salads, vegetable dishes or simply on its own.
