Rueda is an interesting white wine DO in Spain, where producers can make wines from either the international Sauvignon Blanc grape or the local Verdejo variety. We believe the Verdejo to be more authentic and individual.
Grapes are destemmed, crushed and chilled for 6 hours to ensure skin contact; gentle pressing and cool fermentation follows. The wine is then aged for 2-3 months on fine lees.

Made by Bodega Diez Siglos - an enterprising collective of around 70 small to medium growers - who have created their own winery in the style of a modern co-operative. The result is the ability to select grapes from 384 of the region's best vineyards and invest in a winery equipped with the most up-to-date technology, with a capacity of three million liters to boot.
Try with grilled fish, also works well with vegetarian dishes; perhaps a vegetable risotto or goats cheese salad.
