Grapes from the estates vineyards around the town of Sauvian between Beziers and the coast.
The wine is fermented at 15-18ºC for about 20 days. There is no malolactic fermentation.
In 1950, Gilbert Valéry buys a 30 ha wine-farm equipped with a cellar in Serignan, in the Herault French department. During his lifetime, he never stopped widening his domain buying new earth in Serignan and Sauvian, a neighboring village. In 1972, He built a bigger and more modern cellar in Sauvian, at the edge of the road (D19). This new wine-making unity has a capacity of 25.000 hl. In 1974, after Gilbert Valéry's death, his two children, Patricia and Michel, inherit of the family domain. They are the current owners of the DOMAINE DES DEUX RUISSEAUX, and carry on their father's work. In 2001, the VALERY Family has decided to bottle their wines for the first time and builds a wine shop on the site in Sauvian where each wine of our vineyards is offered.
Patricia and Michel Valéry, take back the ancestral wine-farm of CHATEAU LE THOU in 2008. This 15 ha domain is extended on the Côteaux de Sauvian and produce Controlled Appellation Wines Côteaux du Languedoc. The same year, the Valéry Family builds a barrel storehouse and storage warehouse that enable optimum conditions for maturing and ageing the wines.
After 25 years of agriculture of gentle sustainable vine management, it launches a natural and mellow wines range under the name EDEN, a festive wine with modern packaging.
Great as an aperitif. Ideal with shrimps and goat cheese.
