Origin
Sherry comes from Jerez in south-west Spain. The Pedro Ximénez grapes are grown at the Las Cruces Vineyard, located near the coast on sandy soil. The climate is ideal for grape production: each year vineyards receive around 3,000 hours of sunshine for fruit growth and ripening. Winter rains are vital to feed the vines; and coastal breezes will help to moderate the intense heat of southern Spain.
Grape Variety
100% Pedro Ximenez.
Grapes are picked ripe then laid out in the sun to dry. Fermentation starts slowly then is stopped by fortification (the addition of alcohol) to preserve most of the grape's natural sugar. Aged in American oak casks.

Ready to drink now and will not improve by keeping. However, once open keep in the fridge and will last easily for a month.
Producer
Lustau is one of the greatest Sherry houses, founded in 1896 and still family owned. They are famous for their 'Almancenista' sherries - made in collaboration with small, private houses - although this particular sherry is aged in Lustau's own bodegas in Jerez. Highly commended Manuel Lozano - Lustau's winemaker-in-cheif - has received the award for "Best Fortified Winemaker of the Year" from the International Wine Challenge for 5 years running, a significant achievement.
Food Match
Sip on its own or pour it (neat) over vanilla ice cream for a brilliant no-effort pudding. Fantastic with the traditional sticky toffee pudding. Best served ice cold.
